Carnival or Mardi Gras is celebrated a day before the start of the Christian season of lent. Mardi Gras is French for Fat Tuesday. This day is held on a Tuesday before Ash Wednesday or the start of Christian season of fasting and penance called lent. Known popularly as Carnivale in Brazil, Mardi Gras has now been associated as a holiday in the state of Louisiana more specifically in New Orleans. Gumbo is a stew made from flavoured stock using meat or seafoods and then added with 3 basic seasoning vegetables which are celery, bell peppers and onions which is known as the Cajun Holy Trinity. Considered as the state cuisine of Louisiana, Gumbo recipes are not just a simple family dinner recipes from people of this state but a dish that they can trace the soul of which their family originated.
