March 20th: Celebrate this Japanese Spring Equinox with Amazing Sushi Recipes
The Buddhist holiday Higan is celebrated exclusively in Japan during both the Spring and Autumnal Equinox. Higan means "that shore in Sanzu River". This is a common metaphor used in Buddhist literature to refer to enlightenment, wherein one crosses the shore of ignorance and suffering into a place of enlightenment and peace. During the Higan celebration, Japanese Buddhist temples hold special services in both Japan and abroad.
In time with Higan, our Dishfolio food bloggers share their favorite sushi recipes. Sushi is a Japanese delicacy made of cooked rice with vinegar and another ingredient that's usually a raw fish or another type of seafood. The popularity of sushi outside of Japan has increased over the years resulting in many popular western-inspired sushi recipes that aren't exactly known in Japan, like the California roll or Philadelphia roll. Interestingly though, it was the Norwegians who introduced the use of salmon in sushi to the Japanese back in the 1980s.
