August 11: Be Healthy with Zucchini on National Zucchini Day
The Zucchini is a variety of squash, and as such is originated in South America. However, the modern zucchini that we are familiar with today is thought to have been cultivated in Italy, close to Milan, in the late 1800s.
In the 21st century, the zucchini is enjoyed throughout the world because it contains a large amount of vitamins and minerals. Amongst others, the zucchini contains folate, potassium, vitamin A and manganese, and is very low in calories. However, at Dishfolio, we love zucchini because there are so many ways to enjoy it, like in French "ratatouille", or Turkish "zucchini pancakes".
Did you know that you can use zucchini as a replacement for pasta such as lasagna sheets, and that you can buy a zucchini pasta maker to do so? Zucchinis are cheap and very healthy, so why not look up some quick and easy dinner ideas using zucchini?
Chicken Enchilada Zucchini Boats
A crock pot cooked Chili & Lime Chicken added to a spicey sauteed mixture of scooped out zucchini flesh with Peruvian aji amarillo paste and cumin then baked, topped with scallions and cilantro.
