February 21: Celebrate King Harold of Norway's Birthday

It's the birthday of Norwegian King Harald V, and while not an official holiday, we here at Dishfolio think it's still a perfectly good excuse to enjoy some Norwegian cuisine! King Harald assumed the throne upon the death of his father, Olav V in 1991, but as you can imagine, the history of Norway's cooking goes far back. Classic Norwegian cooking is based largely on the raw materials available in Norway's terrain and vast mountains and consisting of mostly game and fish.

Did you know that outside of Asia, Norway is one of the few countries that heavily features sweet and sour flavorings in their food? This mixture of sweet with sour is especially popular in seafood, particularly fish. There's a even a special treatment in Norway called "graving" where fish such as salmon or trout are cured in salt and sugar.
