February 5th is Mexico's most popular holiday and what dish fits this special occasion better than the quesadilla? This dish was created in Mexico but has grown popular in many other countries and has had a lot of variation. It is so easy to make as all you need is cheese, meat or vegetables and a tortilla wrap. It is usually cooked on a comal (a flat griddle for making tortillas), but a traditional frying pan will do as well.
