September 18: Celebrate Fiestas Patrias with Chilean Recipes!
The Fiestas Patrias is held in commemoration of the process that led to Chile's independence from Spain and, like all festivals celebrating national culture, food is a key element. Much of the foodstuffs enjoyed at the Fiestas Patrias are based around fondas, temporary refreshment stands which line the streets during the celebration period. Alas, with inspiration from our bloggers' online food recipes, you can enjoy a slice of Chilean cuisine at home!
Historically, empanadas are one of the main foods associated with fondas. It's said that the empanada itself originates from Galicia and Portugal, although the traditional Chilean variety is distinctive because of its unique pino filling, which consists of beef, raisin, onion, olive and egg.
Interestingly, even impermanent eateries like fondas can acquire something of a legendary reputation in Chile. This is certainly true of the La Grandiosa Bertita, the fonda at which the Chilean President has frequently kick-started the festivities.
