Chubby Hubby Rice Krispy Treats

SummeratMallowandCo-ChubbyHubby1Isn't it amazing how a brand can iconize a dessert? I mean the Girl Scouts did it with the Samoa. Nabisco did it with the Oreo. BJ's did it with the Pizookie. And Ben and Jerry's did it with Chubby Hubby.

If you asked someone 30 years ago what a chubby hubby was, they'd probably start describing their significant other. If you asked someone today, I bet they'd give you a reasonable description of the peanutty, pretzel, chocolately goodness that sells in your grocer's freezer. It's such a winning combo. The salty sweet contrast is just something you can't go wrong with. Thank you Ben and Jerry, you have done the world a favor with this one.

So today I bring you the Chubby Hubby Rice Krispy Treat. This gooey treat is packed full of chocolate covered pretzels and peanuts. Then it's all held together with peanut buttery marshmallows. And of course it's topped with more chocolate. Just because. I'm telling you, you need to go make these. And don't worry, you can thank me later. You have more important things to be doing. Like eating a pan of Chubby Hubby Rice Krispies.

Chubby Hubby Rice Krispy Treats

Note: It's a good idea to put the chocolate covered pretzels and peanuts in the freezer like 20 minutes before you use them. Otherwise the warm marshmallow melts the chocolate right off. Not that I would know or anything.

4 Tbsp butter

6 cups marshmallows

1/2 c peanut butter

1 tsp vanilla extract

1 cup chocolate covered pretzels, slightly crushed

1 cup chocolate covered peanuts

4 cups Rice Krispies

 

1/2 cup chocolate chips

1/4 tsp oil

 

Directions

Mix the Rice Krispies, pretzels, and peanuts in a large mixing bowl and set aside. Melt the butter and peanut butter in a saucepan over low heat. Once melted add in the marshmallows. Stir until they are mostly all melted (this will take a few minutes-low and slow is key for perfect texture) then stir in the vanilla.

Once fully melted, take them off heat and pour over the Rice Krispies. Stir lightly to combine, then dump into a greased 9x9 pan. Allow to cool 5 minutes, then press into pan with greased hands. While they finish cooling, melt the chocolate chips and oil in the microwave at 30 second intervals, stirring in between each one until fully melted. Drizzle the chocolate over the treats. Enjoy!
